Vegan Greek Salad




This one is really exciting for us! This super easy, quick and healthy greek salad recipe is our go-to salad! Especially when we are not in the mood for cooking or spending much time in the kitchen, but don't want to compromise on taste. We love greek salad and could literally eat it all the time! I guess we kind of do.

Our obsession actually started with a trip to Santorini a few years ago. I know...that is so cliché! We were looking for a restaurant with a view of the ocean, that is not in the busy north of the island and that serves vegan options. Spoiler: We didn't find one. But we did find a restaurant that checked all the boxes except for vegan options. We decided to try it anyway and test their chef's flexibility. We checked the menu for a recipe that contained the least amount of non-vegan ingredients, which turned out to be a greek salad. So we ordered two greek salads without feta cheese (they couldn't believe we didn't want the feta cheese!). Long story short, the salad was amazing! It tasted so damn good that we came back every remaining evening of our holiday. Back home we started a wild search for the best plant-based feta cheese, which turned out not to be so wild after all. Our favorite feta cheese is available in two of the biggest grocery store chains in Germany. And that's when greek salad became a big part of our lives.💙

Great, so now that this little love story is over, we can get down to the facts about this recipe.

Our vegan greek salad recipe is really simple and quick to make. It uses only a few ingredients that are easy to find and available in most places. We recommend using small and dark red tomatoes since they have a much stronger taste than the big more watery ones. Also, don't save on the olive oil! We believe a good choice of extra virgin olive oil will make all the difference when it comes to taste. Especially since olive oil is used as dressing on the greek salad. A greek salad is all about the natural tastes of the ingredients, so ditch the fancy vinaigrette that so many recipes call for.

This recipe uses a store-bought plant-based feta cheese from 'Bedda'. Bedda is a German brand, which unfortunately makes this cheese only available in German grocery stores. If you are from the US, check your local grocery stores for 'Violife'. Unfortunately, vegan feta cheese might not be available everywhere, but we truly also love this recipe without it. We are currently working on a home-made version of plant-based feta cheese and can't wait to share it with you! 🌱

Vegan Greek Salad Recipe

Ingredients

400 g (14 oz.) tomatoes

Tomatoes come in many different tastes. We like to use small tomatoes like cocktail or Roma tomatoes. Feel free to use your favorite ones.

400 g (14 oz.) cucumber
1 red onion
150 g (5 oz.) pitted Kalamata olives
1 red bell pepper or sweet pointed pepper
1 package plant-based feta cheese

We like to use the plant-based feta cheese 'Bedda Hirte' the most. If you are from the US, check your local grocery stores for the plant-based feta cheese from 'Violife'. We are currently working on a home-made plant-based feta cheese for you! 😊🌱

Garnish

extra virgin olive oil
salt
pepper

Instructions

Step 1:

Slice the red onion into half rings and put them in a bowl of water to set aside.

Soaking them will remove the sharp taste.

Step 2:

Cut the tomato in wedges (if you use a large tomato, cut the wedges in half), the cucumber in about 1 cm (½ inch) thick quarters, and the bell pepper into square-ish chunks. Add everything to a salad bowl.

You want to have nice big veggie pieces here.

Step 3:

Cut the plant-based feta cheese into cubes. Drain the onion and Kalamata olives. Add everything to the salad bowl and give it a good mix.

Traditionally feta cheese is served as slices on top of the salad, but we like to cut it in cubes.

Garnish

Step 4:

Serve the greek salad on a plate and drizzle with extra virgin olive oil. Add salt and pepper to taste.
