Healthy Peanut Butter & Banana Ice Cream




Now this recipe is one of my all-time favorites and I'm really excited to share it with you! Home-made vegan peanut butter & banana ice cream 💛 And it's healthy! Can you believe it? No, seriously! It is... Well, in moderation, but that is true for almost all foods.

Our recipe doesn't use any added processed sugars. Instead, we use dates and bananas to get that nice sweet taste and even more important to get the creamy ice cream texture. Sugar is an important ingredient for ice cream because it lowers the freezing point. That's what makes ice cream stay creamy inside your freezer and also prevents it from forming ice crystals. Luckily this process also works with natural sugars. But our peanut butter & banana ice cream is not just healthy because of the low amount of sugar. Dates and peanuts are super healthy foods (in moderation) and full of folate and iron!

For this recipe, you will need an ice cream machine. We use the "WMF Küchenminis 3-in-1 Ice Cream Maker". It makes about 450 ml of ice cream in one go. But any other ice cream machine that works with liquids should be fine. You might have to adjust the mixing and freezing time a little. If you are like me and a sucker for ice cream, this machine is worth every penny. But if you just want to enjoy the occasional ice cream once in a while, this machine is probably not worth it for you.

Healthy Peanut Butter & Banana Ice Cream Recipe

Prep time: 20 minutes Wait time: 2 hours Servings: 1 pint of ice cream Category: Desserts Cuisine: Western

Ingredients

1 ripe banana
45 g (1.6 oz.) dates

45 g equal about 3-4 Mazafati dates or 2-3 Medjool dates.

30 g (approx. 2 tbsp.) unsweetened peanut butter
1 tsp. vanilla extract
300 ml (1 ¼ cups) plant-based milk

We use the Barista Edition from Oatly, but any other plant-based milk works.

Instructions

Step 1:

Make sure the bowl of your ice cream maker has been in the freezer long enough and is ready to use.

Step 2:

In a blender add all ingredients and blend until smooth.

Step 3:

Start your ice cream machine and pour in the mixture. Let it mix for a good 15 minutes until it gets a nice soft ice cream consistency.

Step 4:

Put the ice cream in a freezer-safe container and cover with a lid or plastic wrap to avoid the formation of ice crystals. Let it freeze for at least 2 hours until it is ready to scoop.

Before serving heat up your ice-cream scoop or spoon to make the scooping easier. Serve in a bowl and garnish with banana and & peanut butter pieces or really anything else you like.
