Healthy Crunchy Pecan & Fig Granola




This healthy home-made granola recipe is perfect for breakfast, a quick snack, or an energy boost before working out. It's really easy and quick to make and will last you for quite a while. The figs and pecans give this granola a unique and absolutely delicious taste. It is also naturally high in protein and gluten-free. However, some processed oats might not be entirely gluten-free and processed in facilities where they process non-gluten-free foods as well. So to be sure, please check the package of the oats you are planning to use.

Finding a nice vegan crunchy granola can be tricky. Luckily making your own is super easy, mostly cheaper, and definitely more delicious. It also gives you the opportunity to perfectly adjust it to your preferred taste.

We love how flexible this recipe is. You can easily replace the pecan nuts with any other nut of choice. The same applies for the figs. Another crunchy granola version we love is walnuts and raisins.

In our recipe, we use as little sugar as necessary to still make it crunchy. While making this recipe, we tried replacing the maple syrup with dates or bananas to make it even more healthy. But unfortunately, that didn't work. It made our granola soft and took the nice crunchiness away. Which can still taste nice of course, but just wasn't what we were aiming for.

Healthy Crunchy Pecan & Fig Granola Recipe

Prep time: 10 minutes Cook time: 25 minutes Servings: 12 Categories: Breakfast, Snack Cuisine: American

Ingredients

320 g (4 cups) rolled oats
50 g (⅓ cup) flax seeds
200 g (2 cups) coarsely chopped pecan nuts

Can be replaced with nuts of choice.

10 (about 1 cup or 150 g) dried figs, cut in small pieces

Can be replaced with dry fruit of choice.

180 g (¾ cup) peanut butter

Make sure to get 100% peanut butter without any added sugars or salt.

110 g (⅓ cup) maple syrup

Can be replaced with agave syrup.

1 tsp. cinnamon

Instructions

Step 1:

Preheat oven to 160 degrees Celsius.

In a big bowl, mix all ingredients together using your hands until well combined and sticky.

Step 2:

Place baking paper on baking tray and spread the mixture out into a 1 cm (½ inch) thick layer and press it down firmly.

Step 3:

Put mixture in the oven for about 25 to 30 minutes until lightly golden. Once done, take it out of the oven and let it cool down completely.

Step 4:

Carefully break granola into smaller pieces and store in a jar.
