Healthy Cashew Energy Bites




We love these super delicious & healthy vegan energy bites! They are a great snack for the road, on hikes, picnics, or at home. You could also serve them simply as dessert. For whatever occasion you choose to make them, they are a super easy and quick fix.

Apart from their delicious taste, these raw energy bites are also super versatile. You can sub the cashew butter with any other nut butter of choice. Don't have peanuts? No problem, just use any other type of nut you have around and add a little bit of salt to the batter. Don't want to use chia seeds? Okay, simply replace them with flax or hemp seeds. You name it!

With this recipe, you can get really creative and replace ingredients to your preferred taste! You might also like our healthy chocolate balls.

In our recipe, there are no added sugars and all sweetness comes from the dates. Yap, healthy! πŸ’œ But don't let their small size or cute looks fool you! Even though they are really healthy, they are also quite high in calories due to the nut butter and dates. Simply the perfect energy bites! 🌱

Our vegan cashew energy bites are raw and gluten-free. However, some processed oats might not be entirely gluten-free and processed in facilities where they process non-gluten-free foods as well. So to be sure, please check the package of the oats you are planning to use. You could also simply leave the porridge oats or rolled oats out of the recipe. There is no need to replace them for the energy bites to still turn out great. Just be aware, that the batter will be a little stickier this way.

Healthy Cashew Energy Bites Recipe

Prep time: 20 minutes Servings: 10 Categories: Snack, Desserts Cuisines: Middle Eastern, Western

Ingredients

100 g (3.5 oz.) dates, pitted

Equals about 8-9 Mazafati dates.

50 g (1.8 oz.) cashew butter

Make sure your cashew butter is 100% cashews and has no added sugars.

10 g (0.4 oz.) salted peanuts, crushed

Crush salted peanuts using a mortar and pestle or food processor.

2 tsp. porridge oats

You can also crush or cut some rolled oats.

1 Β½ tsp. chia seeds
ΒΌ tsp. cinnamon
2 tbsp. coconut flakes

Instructions

Step 1:

In a bowl add dates, cashew butter, cinnamon, crushed salted peanuts, chia seeds, and porridge oats. Mix with your hands until all ingredients are blended together and a sticky mass forms.

To make it less messy you can also mix it in a food processor.

Step 2:

Form little balls with your hands and put aside. You should be able to make about 10 energy bites out of the batter.

Step 3:

Spread out the coconut flakes on a little plate. Cover the bites by rolling them in the coconut flakes one by one.
