Ever wondered what all the chia seed hype is about?

Chia seeds are a great source of omega-3, omega-6, fiber, protein, calcium, phosphorus, and natural antioxidants [1, 2, 3]. In fact, chia seeds contain all essential amino acids that cannot be made by the human body, making it a complete protein source [2]. The nutritional benefits of chia seeds were already recognized by Maya and Aztec people. Their admiration for chia seeds was so great, they offered them to gods in religious ceremonies [3].

We don't want to go that far, but we do want to give you some great ideas of how to up your chia seed intake. This chia blueberry pudding is a delicious way to do that. It is lightly sweet and pudding-like, making it a great light treat for breakfast or dessert.

Our recipe uses a blueberry coulis without any added sugar. Blueberries are naturally very sweet, double as sweet as strawberries for instance. Heating up the blueberries releases water and breaks cells of the blueberries, releasing the natural pectin which helps in thickening the coulis.

Chia Blueberry Pudding Recipe

Ingredients

Chia Pudding

90 g (1/2 cup) chia seeds
480 ml (2 cups) plant-based milk

We used oat milk.

1/2 tbsp. vanilla extract

Blueberry Coulis

300 g (10 oz.) blueberries (frozen)

We used frozen blueberries, but if they are in season, you could also use fresh blueberries.

Toppings

1 tbsp. puffed amaranth

Can sub for puffed millet or puffed quinoa

1 tsp. cacao nibs
golden berries (also known as physalis)

Instructions

Chia pudding

Step 1:

Add chia seeds, plant-based milk, and vanilla extract to a small container with a lid. Stir well and leave in the fridge for at least 6 hours. The easiest is letting it soak overnight.

Blueberry coulis

Step 2:

Add frozen blueberries to a small pot on medium heat until defrosted and becomes liquid. Let it simmer for about 10 minutes on low heat until coulis thickens.

Putting it together

Step 3:

Fill half of the glass with chia pudding. Add one layer of blueberry coulis on top. Top off with amaranth puffs and decorate with golden berries.
